Ingredients
1 Medium red onion
1 Red Pepper
1 Zucchini
1 Sweet potato
Garlic
2 Tbs Olive oil
Salt & pepper
11/2 Cups Quinoa
3 Cups lightly salted water
1/3 Cup Olive oil
1/3 Cup Balsamic vinegar
Salt & pepper
Directions
Preheat oven to 200 degrees C
Spread vegetables on large baking tray & drizzle with olive oil , salt & pepper. Toss to combine. Roast uncovered until golden brown
Meanwhile boil water & add quinoa. Reduce heat & simmer covered for 15 minutes or until tender. Let stand for 10 minutes & then fluff quinoa with a fork
Combine quinoa with roasted vegetables.
Combine dressing ingredients & pour dressing over
Can be served hot or at room temperature
