COOK'S NOTES: If you really want to get ahead on chag prep then you can pour this marinade over fresh chicken pieces and freeze in the marinade. Allow to defrost and cook as directed. Feel free to add more mustard or thyme or increase heat with a touch of chili flakes.

Lemon - Herb Chicken

Ingredients

1 cup fresh lemon juice
1 teaspoon Dijon mustard (I add more)
1/2 cup honey
1/4 cup vegetable oil
1/4 cup soya sauce
1 teaspoon dried oregano
1/2 teaspoon thyme
1 teaspoon crushed garlic
Coarse black pepper to taste

* Use a mix of legs, thighs, breasts, wings etc. If you add a couple of boneless breasts into the mix for those who prefer meat off the bone that will be fine too.s chicken on bone*

Directions


1: Mix marinade ingredients together, pour over chicken, and marinate overnight in the refrigerator.
2: Place pieces in a single layer in an oven dish, and roast at 180 C for approximately 1 hour, turning to ensure they are crisp on all sides.
